I have discovered our ultimate curry recipe, which comes out perfect every time, exactly as we like it... Bradford-style masala, beautifully brown without a hint of tomatoey-ness, pleasantly sweat-inducing, sinus-opening heat, and fall-off-the-bone meat tenderness (although the one in the photo is made with mince!). I can now bid farewell to my Rafi's Spicebox pouches which I used to shamefully cheat with when asked to make a curry.
Well done for doing a proper curry! But I still shamefully cheat with Rafi's. In fact I'm placing an order right now!

ReplyDeleteWho knows... i might be tempted by Rafi sometime in the future, because my new recipe is very labour-intensive and time consuming. But it makes such a huge batch that i ended up with loads for the freezer, so it kind of made all the work worthwhile.
